Crab & Cream Cheese Tortellini Soy butter Sauce

(Uncooked RM32)

1. Pick off coriander leaves and set aside, chop up coriander stalks

2. In a mixing bowl, place room temperature cream cheese, crab meat, lemon zest, chopped onion, and chopped coriander stalks

3. Mix it all up and season with salt, pepper, and lemon juice to taste

4. Lay out wanton skins, portion out tortellini filling evenly and place each portion in the middle of the wanton skin

5. Brush egg wash half way around the edges of the wanton skin, fold it in half, making sure there are no air pockets in the filling, then use your index finger to push in the middle of the tortellini, brush edges with egg wash and fold the edges together into a tortellini. 

6. Blanch tortellini in boiling water for 1.30 minutes, then strain and drizzle with olive oil, set aside

7. In a medium high heat pan, put in butter followed by garlic paste, then deglaze with soy sauce, and a splash of water(approx 100ml), let it simmer and reduce slightly. Then place tortellini into the sauce and toss, add Parmesan and cook till sauce is coating consistency, turn off heat

8. Chop reserved coriander leaves and mix in with tortellini

9. Place tortellini on a plate

Light Soy 10g
Beaten Egg (egg wash) 1nos
